Copycat Costco Sheet Cake
- 3 cups white sugar
- 3 cups flour
- 3 teaspoons baking powder
- 3 teaspoons baking soda
- 1 teaspoon salt
- 3 cups milk, divided
- 4 eggs
- 8 teaspoons vanilla extract, divided
- 1 cup vegetable oil
- 2 cups heavy whipping cream
- 1 package instant vanilla pudding mix
- 2 sticks (1 cup) butter, softened
- 10 to 12 cups powdered sugar

1. Preheat oven to 350 F.

2. Fit paddle attachment to mixer, and add sugar, flour, baking powder, baking soda, and salt. Add eggs one at a time, and continue mixing. With mixer running, add two cups milk, four tsp vanilla extract, and vegetable oil. Mix until just combined.
3. Spray two 9"x13" cake pans with cooking spray, and put parchment at the bottom. Divide batter into pans and bake for 20 mins. until light golden brown. Check with toothpick. Let cake cool.

4. For filling, fit mixer with whisk attachment, add two cups heavy whipping cream and half cup milk. Add powdered pudding mix while whipping. Whip mixture until combined, then increase speed to whip into a thick mousse.
5. For frosting, fit paddle attachment to mixer, whip softened butter until smooth. With mixer running, gradually add two cups of powdered sugar, then gradually add half cup milk. Add four tsp vanilla extract.

6. Gradually add rest of powdered sugar, scraping down sides of bowl as needed. Once all ingredients are incorporated, increase mixer speed to whip frosting.
7. Place one cake layer on a cardboard cake board or platter, cover first layer with mousse filling, then top with second cake layer. Frost the top and sides of cake. Decorate as desired.
